This week, big changes at two Baltimore restaurants. Chef Tim Dyson from Bluegrass Tavern in South Baltimore has moved to Dooby’s in Mt. Vernon. Dyson will be Executive Chef, while current chef Paul Lee will be staying on board, as well.
Dooby’s will launch a new dinner menu on Thursday, August 21 featuring bar bites, comfort eats and seasonal entrees in Asian-American cuisine. In addition to their popular Korean-inspired Shoyu and Miso Ramen, new dinner menu highlights include, Chicken Curry Summer Rolls, Meatball Banh Mi and vegan-friendly Quinoa Bibim bowl. YUM. I’m hoping Chef Dyson also puts some of his amazing charcuterie experience to work at Dooby’s from time to time, as well. We will see.
Dyson told me, “Phil Han (Dooby’s owner) and I have been talking for awhile casually. He has grown so fast and he was ready to bring in an executive chef in to help coach the cuisine team to help bring them to the next level and this seemed like a great opportunity. I’ve been really impressed with the Dooby’s team’s energy and Phil’s drive to make a change in the Baltimore food scene. The whole staff has taught me so much and I only hope to enhance the Doobys brand and to help bring the cuisine team to the next level.”
Dyson says he will be helping with the transition at Bluegrass for the next month. His sous chef Antonio Rice will take the reigns in the kitchen and Lori Yanke will be keeping the strong charcuterie program on track.
Dooby’s bar manager (and one of Baltimore’s best mixologists and home brewers) Josh Sullivan will be pairing entrees with new selections including Flying Dog’s limited Lemongrass Rice Ale, a sake offering and sakeshochu cocktails like the Port of Yamazaki (Yamazaki 12 year, yuzu, lemon, egg white, sencha green tea syrup). Dinner and cocktail service is available at 5pm Tuesday through Saturday and reservations can be made at doobys.com.
