A new online cookbook from the Department of Natural Resources shows that Maryland has more to offer than just crab cakes.

“Wild Maryland” is a compilation of recipes submitted by Marylanders featuring foods that can be fished, foraged, or hunted in the state.

DNR initially put out a call for recipes submissions in the spring of 2020.

Around 75 recipes were evaluated by a panel of subsistence hunters, anglers, and wild game and fish cooking enthusiasts.

Recipes had to meet three criteria to be included in the cookbook: the use of species that are native to Maryland, easy to follow cooking instructions, and specific measurements for ingredients.

Some of the recipes include anecdotes and family backstories.

“Maryland is home to many proud hunters, anglers, and wild foragers and we are also well known for our great cuisine,” Secretary Jeannie Haddaway-Riccio said in a statement.

“Wild Maryland showcases our heritage, our way of life, and our cooking traditions through recipes that can be shared and passed down for generations to come,” she said.

The department also launched a Pinterest page, where users can pin and share recipes.

DNR will continue to accept recipe submissions for a future edition of the cookbook. Anyone interested can send recipes to Recipes.DNR@maryland.gov.
